Hearty Chickpea and Veggie Stir-fry

Chickpea stir-fry

There is nothing like a hearty stir-fry for dinner after a long day at work... Unless it is a hearty stir-fry and a glass of merlot..but we digress.

This is one of our go to meals for a quick dinner, and has become a stable in our house.  We use fresh or frozen ingredients based on how much time we have becasuse - laziness.


Chickpea stir-fry with broccoli

  • 1 can of chickpeas
  • 2 cups of frozen/fresh broccoli
  • 1 medium onion chopped
  • 1 cup of spinach
  • 1 tbsp of garlic powder
  • 1 tbsp basil
  • 2 tbsp nutritional yeast
  • salt to taste
  • pepper to taste

In a medium pan, saute the chopped onion until they are translucent (about 2-3 minutes). Add the chickpeas, and frozen broccoli, basil, garlic, salt and pepper.  Allow this to cook for 7-8 minutes.  Add the nutritional yeast and spinach and saute for 2-3 more minutes.  Serve hot.

Makes 2-3 servings
