What do you do when you want a chocolate chip cookie, but you also want double chocolate chip cookie in one bite? Put them together of course! This is our way of being indecisive. Terrible quality to have, but delicious result!
To make this we used the "Best Big, Fat, Chewy Chocolate Chip Cookie" recipe from allrecipies and veganized it. We split the batter in half and added cocoa to one half then stuck them back together - la voila! Here is our version:
- 2 cups of all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup earth balance, melted
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 tbsp vanilla extract
- 1 tbsp cornstarch + 2-3 tbsp water (egg substitute)
- 1 1/2 cup vegan chocolate chips
- 1/4 cup cocoa
Preheat oven to 325 F
Prepare one cookie sheet or line with parchment paper
Sift together flour, baking soda and salt in one bowl. Mix melted earth balance, brown sugar, white sugar and vanilla extract. Mix together the egg substitute then add to the sugar mixture. Fold in the chocolate chips. Separate the batter into two bowls. Mix the cocoa into one half. Shape into round cookies, split in half then stick one vanilla side with one chocolate side.
Bake for 15 to 17 minutes or until edges are slightly brown. Cool for 10 minutes before snacking them down
