Vegetable sandwich and baked onion rings

Sometimes lunch just has to look fancy - even if it is simple as a peanut butter and jelly sandwich.  Maybe not quite that easy, but at least it is fun to make!  The sandwich we'll leave to you, but the recipe for the onion rings recipe is up for grabs below.


Oven-Baked Onion Rings

  • 1 large red onion, thickly sliced
  • 1 cup of white flour
  • 1 cup panko crumbs
  • 1 1/2 tsp basil
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tbsp of nutritional yeast
  • 1 1/2 cup soy/almond milk
  • 1/8 tsp package sazon

Preheat the oven to 350 F

Separate the onion into full circular rings.  Set up 3 mixing bowls and a cookie sheet lightly sprayed with olive oil.  In one bowl mix the panko crumbs, basil, onion powder, garlic powder and nutritional yeast.  In the other bowl mix the soy or almond milk with the sazon.  Dip an onion ring into the milk, then into the flour. Shake it off then dip it into the milk again, then into the panko crumb mixture.  Place the breaded onion ring on the prepared sheet.  Repeat with the entire onion.  Bake for 25 minutes or until lightly browned.  If desired put the onion rings under the grill for 1-2 minutes to brown.
