Lunchtime with Adashoftwo

Simple and easy is the name of the game for us when we make our lunch. Yup - you heard right. In the land of endless food trucks and restaurants that is New York City, we bring our lunch to work every day.  Growing up in Ottawa our parents used to pack us lunch every day as kids.  The habit stuck when we moved up in years and on in countries. 

We have found the easiest lunch to be a hearty salad.  The one pictured here is actually in the snap top container that we use for lunch.  All you need is a couple salad bags, some beans, tofu and a little bit of imagination. We buy a large bag of baby spinach, and a large bag of kale salad mix from Costco and go to town with the toppings.  Here is the basic recipe.  

Adashoftwo basic lunch salad

  • 2 cups baby spinach
  • 3/4 cup kale salad mix
  • 1/4 cup black beans
  • 1/4 cup cubed tofu
  • nutritional yeast to taste
  • walnuts

Directions: 

Mix spinach, and kale salad mix in a medium-sized bowl.  Throw on the black beans, cubed tofu and walnuts. Sprinkle with nutritional yeast.  Add 2 tablespoons of your favorite dressing in a small container on the side if you are taking it to work for lunch, or in the salad if you plan to enjoy it at home.

Makes 1 serving

Extra toppings (have some fun with it!):

  • 1/4 cup strawberries
  • 2 tbsp of sesame seeds
  • 2 tbsp roasted almonds
  • 1/4 cup shredded carrots
  • 1/2 cup shredded cabbage
  • 1/4 cup vegan cheese
