We are not the biggest fans of starchy foods.  It is difficult to remember the last time we bought a bag of potatoes (even sweet potatoes), we have a bag of basmati rice collecting dust in the cupboard and angel hair pasta hidden at the back of our pantry.  The vegan diet has so many complex carbohydrates found in other foods, that we keep our diet balanced without all the traditional starches.

This became more difficult when we started training for our first half marathon.  Simple carbohydrates like pasta are race fuel, and commonly are eaten the night before a long run. To jazz up regular pasta we whipped up this yummy lasagna to give us wings for our workouts.  Without a doubt, this is the best lasagna we have ever eaten.

Keeping it real, we didn't measure all the ingredients, but a list of the elements may get you started on making one of your own!

Late night Lasagna

  • homemade tofu feta cheese
  • textured vegetable protein
  • lasagna noodles
  • tomato paste
  • nutritional yeast
  • chopped garlic
  • onion powder
  • baby spinach roughly chopped
  • vegan cheese
  • salt and pepper to taste
