Creamy Coleslaw

We are in the midst of planning our birthday bbq.  When it comes to parties, we go all out with decor and venue, then go HAM planning the food.  Our latest creation is a tangy delicious coleslaw, perfect as a side salad or to adorn a veggie burger/veggie dog.  A special ingredient, avocado, gives it the creamy taste and inventive flavor.  It was inspired by this amazing non-vegan salad from here. Enjoy!

Creamy Vegan Coleslaw

  • 1/2 head of cabbage, chopped
  • 1/2 head of cabbage, chopped
  • 1 granny smith apple, julienned
  • 1 honey crisp apple, julienned
  • 1 cup of baby carrots, julienned
  • 1 mashed avocado
  • 1/2 cup of vegan bacon bits
  • 2 tbsp dijon mustard
  • 1/4 cup canola oil
  • 1/4 cup apple cider vinegar
  • pepper to taste
  • cashews, chopped (optional)

Instructions

  1. In a large bowl combine the chopped cabbage, carrots and apple.
  2. In a small separate bowl mash the avocado.
  3. Add the vegan bacon bits, oil, vinegar and mustard. Mix well.
  4. Combine the avocado mix with the vegetables and distribute evenly. Add pepper to taste.
  5. Garnish with cashews and serve immediately. 

Bonus: If you have time, chill make the day before and chill overnight. This deepens the delicious flavor.
