Tofu Caesar Salad Dressing

Lazy Fridays can give way to amazing adventures in the kitchen.  This Friday led to the creation of  "Adot style" caesar salad with baby spinach, red cabbage, roasted corn and homemade creamy salad dressing.  The only thing that makes it "Adot style" is the fact that whatever was readily available in the kitchen! Necessity is the mother of creativity.  See below for our caesar dressing recipe!

Tofu Caesar Salad Dressing

  • 1/2 cup tofu (silken is best)
  • 1 1/2 tbsp lemon juice
  • 1 tsp garlic powder
  • 2 tbsp nutritional yeast
  • 1/4 cup olive oil
  • 1/2 tsp soy sauce
  • 1 1/2 tsp red wine vinegar
  • Salt to taste

In a blender, food processor or in a bowl with a hand mixer, blend recipe ingredients until desired consistency.  Add extra nutritional yeast to taste.  Serve fresh or store in an airtight container. Makes 3/4 cup.
